You just know when a mom has got that magnetism of a supernova. She has 6 kids and manages to power through her whole day, full of energy, no help! Wiping her kids nose with one hand and nursing with the other. What? But how? Where does she get it? Maybe she's born with it, but maybe it's those flourless, no butter/no oil no bake cocoa nibs, peanut butter and dates energy bites that just keep her charged through the day. Guess you just won't know until you try them...

So here it is!!

INGREDIENTS:

  • 7 dates

  • 2 Tbsp cocoa powder

  • 2 Tbsp chia seeds

  • 2 Tbsp cocoa nibs/mini chocolate chips

  • 2 Tbsp quinoa

  • one pinch salt

  • 3 Tbsp oats

  • 1 Tbsp maple syrup

  • Half Tsp vanilla extract

  • 2 Tbsp peanut butter or almond butter

Want the 5 ingredient easy version? Of course you do!

  • Dates

  • 2 Tbsp cocoa powder

  • Peanut butter

  • Chia Seeds

  • Oats

  • Chocolate chips

The good news about these is that they are totally customizable! Don’t have peanut butter? Substitute any other nut butter. Not into chocolate (seriously though?) Ok then, add more oats and chia seeds. Haven’t heard of chia seeds? Then substitute flax or hemp seeds. It’s really that easy mama!

INSTRUCTIONS:

  1. Pulse pitted dates in your blender until they are in small pieces or it forms a ball (see photo above).

  2. Add oats, chocolate, chia seeds and peanut butter and pulse or mixed until combined. You want there to be consistently small pieces but not overly processed.

  3. Carefully roll into 1-inch balls, using the warmth of your hands to mold them together. Should make about 14-15 balls

  4. To set these delicious snacks, pop them into your fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term as well.
